High-fiber and gluten-free waffle recipe

This waffle recipe combines high-fiber flours, naturally sweet ingredients, and a balanced flavor. The result is nutritious, clean, and easy to make — perfect for weekday mornings or weekend brunches.


Ingredients

  • 150 g tiger nut flour @ flourhunt
  •  A mixture of oat and almond flour is also suitable as an alternative.
  • 100 g raw buckwheat flour
  • 2 tbsp chia seeds
  • 120 g applesauce
  • 220 g plant milk or water

For a thinner batter, add up to 50 g of additional liquid — the result will be a softer and chewier waffle.

  • 0.5 teaspoon baking soda or baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon vanilla - a small but very important nuance in the taste.

Benefits of Tiger Nut Flour

Tiger nut flour is naturally sweet, high in fiber, and lower in fat, giving waffles a pleasant, balanced flavor profile without the need for additional sweeteners.

If you use alternative flours (e.g. a mixture of oat and almond flour), the author recommends adding about 50 g of sweetener to achieve equivalent sweetness and balance.


A crunchier or crispier option

If you prefer extra crispy or slightly crunchier waffles, replace some of the liquid with 50–80 g of coconut, avocado, or another oil of your choice.


Baking

The author of the recipe uses a Tefal waffle maker with interchangeable plates, which works very well for this recipe. Thanks to the Teflon coating, there is no need to add fat and the dough does not stick. If you know of a high-quality classic waffle maker with a better coating, recommendations are always welcome.
