Raw chocolate with a little spice – a delicious and nutritious recipe

Raw chocolate is a treat that retains all of its natural nutrients and enzymes because it is not heat-processed at high temperatures. Traditional chocolate is often heated above 40-45°C, which can reduce the flavonoids, antioxidants, and other beneficial compounds in cocoa. Raw chocolate, on the other hand, is prepared at low temperatures, preserving the rich flavor and nutritional value of cocoa.

Ingredients

  • 100 g cocoa butter
  • 30 g of raw cocoa powder (approx. 6 tablespoons)
  • 20–40 g coconut palm sugar (approx. 2–4 tbsp, finely ground)
  • 1 g Himalayan or sea salt (pinch)
  • 0.3 g cinnamon (small pinch)
  • 0.2 g cardamom (a very small pinch)
  • (optional) 1 g vanilla paste
  • (optional) nuts, berries, coconut flakes, etc.

Preparation

  1. Melt the cocoa butter in a water bath, do not heat above 45°C .
  2. Grind the coconut palm sugar finely, for example in a coffee grinder.
  3. Add cocoa powder, granulated coconut sugar, salt, cinnamon and cardamom to the melted butter. Mix with a whisk until smooth.
  4. Add vanilla paste if desired.
  5. Pour the mixture into the mold and sprinkle with optional toppings – nuts, dried berries, or coconut flakes.
  6. Place the mold in the refrigerator for at least 2 hours or in the freezer for at least 1 hour.
  7. Remove from the mold, refrigerate, and enjoy a flavorful, nutritious treat.
